Ingredients:
- 1 whole brisket 12-14 pounds
- 2 tablespoons chili powder
- 2 tablespoons ground cumin
- 2 tablespoons paprika
- 2 tablespoons brown sugar
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon white pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- Wood chunks or chips for smoking hickory or oak
- Water for the water pan
Instructions:
Preheat your smoker to 225F
In a bowl, mix together chili powder, cumin, paprika, brown sugar, salt, black pepper, white pepper, garlic powder, onion powder, and cayenne pepper to create a rub
Trim excess fat from the brisket, then rub the spice mixture evenly over the brisket
Place the brisket in the smoker, fat side up
Add wood chunks or chips for smoking, and place a water pan in the smoker
Smoke the brisket at 225F for about 1
5 hours per pound or until the internal temperature reaches 200F
Once done, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing
Slice the brisket against the grain and serve
