Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or oil for air frying
Instructions:
Preheat the air fryer to 375F 190C
In three separate shallow bowls, place the flour seasoned with salt and pepper, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs
Dip each shrimp first in the flour, then the egg, and finally coat it thoroughly with the coconut breadcrumb mixture
Place the coated shrimp in the air fryer basket, making sure they are in a single layer and not touching each other
Lightly spray the shrimp with cooking spray or brush them with oil to help them brown
Air fry the shrimp for 8-10 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy
Serve the coconut shrimp hot with your favorite dipping sauce
