Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 12 samosa wrappers
- Oil for frying
Instructions:
Dice the sweet potatoes and boil them until they are soft
Then drain them and mash them
Put olive oil in a pan and heat it over medium-low heat
Put in the minced garlic and chopped onion
Saut until the onions are soft
Ground cumin, ground coriander, turmeric, chili powder, salt, and pepper should all be added to the pan with the mashed sweet potatoes
Stir every now and then for 5 minutes
Take the sweet potato mix off the heat and let it cool down
Spoon some of the sweet potato mixture into the middle of a samosa wrapper
Cover the filling with the wrapper and fold it over to make a triangle
Use water to seal the edges
Do it again with the rest of the filling and wrappers
Put oil in a deep pan and heat it over medium-high heat
It will take about 34 minutes for each batch of samosas to turn golden brown and crispy
Take the samosas out of the oil and let them drain on paper towels
Serve hot with the sauce of your choice
