Ingredients:
- 4 slices of sourdough bread
- 2 tablespoons of butter, softened
- 1 cup of shredded cheddar cheese
- 1 ripe avocado, sliced
- 2 chipotle peppers in adobo sauce, chopped
- 1/4 cup of diced red onion
- 1/4 cup of fresh cilantro leaves
- Salt and pepper to taste
Instructions:
A thin layer of soft butter should be put on one side of each sourdough bread slice
Spread the shredded cheddar cheese out evenly on the side of two slices of bread that isnt buttered
Spread avocado slices, chipotle pepper chunks, red onion dices, and fresh cilantro leaves on top of the cheese
Add pepper and salt to taste
To make sandwiches, put the last two slices of bread on top, buttered side facing down
Warm up a nonstick pan over medium-low heat
Put the sandwiches in the pan and cook for three to four minutes on each side, or until the cheese melts and the bread turns golden brown
Take it out of the pan and let it cool for one minute
Then cut it in half
You can enjoy your Chipotle and Avocado Grilled Cheese Sandwiches while they are still hot
