Ingredients:
- 2 large Yukon Gold potatoes, diced
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 1 cup assorted wild mushrooms, chopped
- 2 cloves garlic, minced
- Salt and freshly ground black pepper
- 2 tablespoons chopped fresh parsley leaves
Instructions:
Place diced potatoes in a pot of salted water and boil until tender, about 8-10 minutes
Drain and set aside
In a large skillet, heat olive oil over medium-high heat
Add onion and bell peppers, saut until softened, about 5 minutes
Add mushrooms and garlic, cook until mushrooms are tender, about 5 minutes
Add cooked potatoes to the skillet, season with salt and pepper to taste, and cook until browned and crispy, stirring occasionally, about 8-10 minutes
Sprinkle with chopped parsley before serving
