Buffalo Cauliflower Salad

Buffalo cauliflower, crisp greens, creamy avocado, and tangy vegan ranch dressing come together in this Buffalo Cauliflower Salad to make a filling and tasty meal. Its a great choice for a light lunch or dinner.

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1/2 cup buffalo sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 6 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup vegan ranch dressing
  • 2 tablespoons chopped fresh cilantro or parsley optional

Instructions:

Preheat the oven to 425F 220C

In a large bowl, toss cauliflower florets with buffalo sauce, olive oil, salt, and pepper until evenly coated

Spread cauliflower in a single layer on a baking sheet lined with parchment paper

Bake for 20-25 minutes, or until cauliflower is tender and slightly crispy

In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, and avocado

Top the salad with roasted buffalo cauliflower

Drizzle vegan ranch dressing over the salad

Garnish with chopped fresh cilantro or parsley, if desired

Toss the salad gently to combine all ingredients

Serve immediately and enjoy
