Ingredients:
- 1 head cauliflower, cut into florets
- 1/2 cup buffalo sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- 6 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup vegan ranch dressing
- 2 tablespoons chopped fresh cilantro or parsley optional
Instructions:
Preheat the oven to 425F 220C
In a large bowl, toss cauliflower florets with buffalo sauce, olive oil, salt, and pepper until evenly coated
Spread cauliflower in a single layer on a baking sheet lined with parchment paper
Bake for 20-25 minutes, or until cauliflower is tender and slightly crispy
