Caprese Roasted Asparagus

Caprese Roasted Asparagus is a tasty side dish that combines the freshness of Caprese salad with the tenderness of roasted asparagus spears. This dish is great for any event because the balsamic glaze makes it sweet and sour at the same time.

Ingredients:

  • 1 bunch of asparagus spears
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella balls
  • 2 tablespoons fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions:

Turn on your oven and heat it up to 425F 220C

Clean the asparagus spears and cut off the tough ends

Sprinkle olive oil over the asparagus and put it on a baking sheet

Add black pepper and salt

Add toss to cover evenly

Put the asparagus in an oven that has already been heated and roast it for 12 to 15 minutes, or until it is soft but still crisp

You can make the Caprese topping while the asparagus is roasting

Put the cherry tomatoes cut in half, the fresh mozzarella balls, and the chopped basil leaves in a bowl

Add the balsamic glaze and toss everything together

Take the asparagus out of the oven and let it cool down a bit after its done roasting

Place the roasted asparagus on a platter and cover it with the Caprese mixture

If you want, add more fresh basil leaves as a garnish
