Ingredients:
- 1 pound fresh green beans, trimmed
- 6 slices of nitrate-free bacon, chopped
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup full-fat coconut milk
- 1 tablespoon coconut aminos
- 1 teaspoon ghee
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Heat a large saucepan of salted water until it boils
When the green beans are crisp-tender, add the chopped ones and cook for 34 minutes
After draining, set aside
Cook the chopped bacon in a big skillet over medium heat until its crispy
Take out the bacon from the skillet and place it on a plate covered with paper towels
Place the sliced mushrooms and ghee in the same skillet
Saute the mushrooms for 5 to 6 minutes, or until they are soft and browned
Once fragrant, add the minced garlic and cook for an additional minute
After adding the coconut aminos and milk, stir everything together
Simmer for two to three minutes to give the sauce a slight thickening
Place the cooked green beans back into the skillet and mix in the sauce made of bacon and mushrooms
To taste, add salt and pepper for seasoning
Place the crispy bacon pieces on top of the dish and sprinkle with the fresh parsley
