A warm and comforting soup with tasty turkey meatballs, savory three-cheese tortellini, and healthy spinach in a fragrant broth.
Ingredients:
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 6 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 bay leaf
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 8 oz three cheese tortellini
- 4 cups fresh spinach leaves
- 1/4 cup grated Pecorino Romano cheese
- 1/4 cup grated Mozzarella cheese
Instructions:
In a bowl, mix ground turkey, breadcrumbs, Parmesan cheese, beaten egg, chopped parsley, salt, and pepper
Form into small meatballs
In a large pot, bring chicken broth to a simmer
Add carrots, celery, onion, garlic, bay leaf, oregano, basil, and thyme
Simmer for 10 minutes
Add meatballs to the pot and simmer for an additional 10 minutes
Meanwhile, cook tortellini according to package instructions
Drain and set aside
Add cooked tortellini and spinach to the pot
Simmer for 5 more minutes until spinach wilts
Serve hot, garnished with grated Pecorino Romano and Mozzarella cheese
