These barbacoa burritos are bursting with flavor and incredibly tender thanks to slow cooking. Perfect for a satisfying meal any day of the week
Ingredients:
- 3 lbs beef chuck roast, trimmed and cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup apple cider vinegar
- 1/4 cup lime juice
- 3 chipotle peppers in adobo sauce, chopped
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp ground cloves
- 1/2 cup beef broth
- Salt and pepper to taste
- Flour tortillas

Instructions:
Place beef chunks, onion, garlic, apple cider vinegar, lime juice, chipotle peppers, cumin, oregano, cloves, beef broth, salt, and pepper in a slow cooker
Mix well to combine ingredients
Cover and cook on low for 8 hours, or until beef is tender and shreds easily with a fork
Once cooked, shred the beef using two forks and mix it back into the cooking liquid
Warm flour tortillas according to package instructions
To assemble burritos, place a generous portion of barbacoa beef onto each tortilla, then add your favorite toppings
Roll up the tortillas to form burritos
