This Massaman curry made in a slow cooker is thick, tasty, and very simple to make. As the beef cooks slowly in a mix of fragrant spices and smooth coconut milk, it gets tender and juicy. Just right for a comforting meal.
Ingredients:
- 1 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can 14 oz coconut milk
- 1 cup beef broth
- 2 tablespoons Massaman curry paste
- 2 tablespoons brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon tamarind paste
- 1 cinnamon stick
- 2 star anise
- 1 bay leaf
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 1 cup frozen peas
- Chopped cilantro, for garnish
- Cooked rice, for serving
Instructions:
Put the beef, onion, garlic, coconut milk, beef broth, Massaman curry paste, brown sugar, fish sauce, tamarind paste, bay leaf, cinnamon stick, and star anise in a slow cooker
For 6 to 8 hours, or until the beef is soft, cover and cook on low heat
You should add the baby potatoes and carrots 30 minutes before you serve
Mix well
After adding the frozen peas, cook for another 15 to 20 minutes
Put it on top of cooked rice and sprinkle chopped cilantro on top
