On a cold day, this hearty stew is the perfect meal to warm you up. Its full of flavor and protein because it has seitan and vegetables in it.
Ingredients:
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound seitan, chopped
Instructions:
Put the onion, garlic, carrots, potatoes, tomatoes, kidney beans, vegetable broth, thyme, rosemary, paprika, salt, and pepper in a slow cooker
For 6 to 8 hours on low heat or 3 to 4 hours on high, cook until the vegetables are soft
Add the seitan and stir it in
Cook for another 30 minutes
