Ingredients:
- 1 head broccoli, cut into florets
- 1 head cauliflower, cut into florets
- 250g pasta of your choice
- 4 cloves garlic, minced
- 1 lemon, zest and juice
- 1/4 cup grated Parmesan cheese
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
Preheat the oven to 200C 400F
Toss broccoli and cauliflower florets with 2 tablespoons of olive oil, minced garlic, salt, and pepper on a baking sheet
Roast in the preheated oven for 20-25 minutes, or until vegetables are tender and lightly browned
While the vegetables are roasting, cook pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat the remaining tablespoon of olive oil over medium heat
Add the cooked pasta, roasted broccoli, and cauliflower to the skillet
Add lemon zest and juice, grated Parmesan cheese, and toss everything together until well combined and heated through
Season with additional salt and pepper to taste
Garnish with chopped fresh parsley before serving
Serve hot and enjoy
