  • 400g Brussels sprouts, shaved
  • 100g vegan Gorgonzola-style cheese, crumbled

  • 2 cloves garlic, minced

Instructions:

Set a pan on medium heat and add the olive oil

Add the minced garlic and cook until it smells good

Ingredients:

  • 1 whole shad, gutted and cleaned
  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • Wood chips for smoking hickory or applewood

Instructions:

Rinse the shad under cold water and pat it dry with paper towels

In a bowl, mix together kosher salt, brown sugar, black pepper, garlic powder, onion powder, paprika, and cayenne pepper to create the dry rub

Generously coat the shad, inside and out, with the dry rub

Make sure to rub the mixture into the flesh for even flavor

Place the shad in a large plastic bag or wrap it in plastic wrap

Refrigerate for at least 4 hours or overnight to allow the flavors to penetrate the fish

Preheat your smoker to 225F 107C and add the wood chips for smoking

Remove the shad from the refrigerator and let it come to room temperature for about 30 minutes

Place the shad on the smoker grates, skin side down, and smoke for approximately 2-3 hours or until the internal temperature reaches 145F 63C

Monitor the smoke and add more wood chips as needed to maintain a steady smoke

Once done, carefully remove the smoked shad from the smoker and let it rest for a few minutes before serving

These Chipotle and Avocado Grilled Cheese Sandwiches are a delicious twist on the classic grilled cheese. The combination of creamy avocado and smoky chipotle peppers with melted cheddar cheese is simply irresistible. Perfect for a quick and satisfying meal.

Ingredients:

  • 4 slices of sourdough bread
  • 2 tablespoons of butter, softened
  • 1 cup of shredded cheddar cheese
  • 1 ripe avocado, sliced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1/4 cup of diced red onion
  • 1/4 cup of fresh cilantro leaves
  • Salt and pepper to taste

Instructions:

A thin layer of soft butter should be put on one side of each sourdough bread slice

Spread the shredded cheddar cheese out evenly on the side of two slices of bread that isnt buttered

Spread avocado slices, chipotle pepper chunks, red onion dices, and fresh cilantro leaves on top of the cheese

Add pepper and salt to taste

To make sandwiches, put the last two slices of bread on top, buttered side facing down

Warm up a nonstick pan over medium-low heat

Put the sandwiches in the pan and cook for three to four minutes on each side, or until the cheese melts and the bread turns golden brown

Take it out of the pan and let it cool for one minute

Then cut it in half
