Ingredients:
- 1 small pumpkin, peeled and diced
- 2 cups cooked black beans
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Put black beans, green beans, onion, garlic, cumin, paprika, salt, and pepper in a slow cooker
Add the diced tomatoes and mix them all together
Make sure to stir everything together well
Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the pumpkin is soft
