Vegan Paleo Pumpkin and Black Bean Slow Cooker Stew

This hearty and flavorful vegan stew combines the sweetness of pumpkin with the earthiness of black beans, creating a comforting meal thats perfect for chilly days. Its Paleo-friendly and cooked slowly to allow the flavors to meld together beautifully.

Ingredients:

  • 1 small pumpkin, peeled and diced
  • 2 cups cooked black beans
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

Put black beans, green beans, onion, garlic, cumin, paprika, salt, and pepper in a slow cooker

Add the diced tomatoes and mix them all together

Make sure to stir everything together well

Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the pumpkin is soft

Once its done, check the seasoning and make any necessary changes

Serve hot with fresh cilantro on top
