Ingredients:
- 2 salmon fillets
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- 2 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions:
Turn on your grill or oven and heat it up to 400F 200C
Add salt, pepper, and dried oregano to the salmon fillets after brushing them with olive oil
After 12 to 15 minutes, the salmon should be easy to flake with a fork
You can grill or bake it
Put it somewhere to cool down a bit
Mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese should all be put in a large salad bowl
Cut up the garlic, red wine vinegar, Dijon mustard, and lemon juice and mix them together in a small bowl
This will make the dressing
Cut the cooked salmon into small pieces that you can easily eat and add them to the salad
Pour the dressing over the salad and gently toss it all together
Add fresh parsley as a garnish and serve right away
