Ingredients:
- 1 whole chicken, cut into pieces
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 stalks celery, sliced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
Instructions:
In a large pot, heat olive oil over medium heat
Add onions and garlic, cook until softened
Add chicken pieces, carrots, celery, chicken broth, thyme, salt, and pepper
Bring to a boil, then reduce heat and simmer for 30 minutes, until chicken is cooked through
Meanwhile, prepare the dumplings
In a bowl, mix together flour, baking powder, and salt
Cut in butter until mixture resembles coarse crumbs
Stir in milk until just combined
Drop spoonfuls of dumpling mixture into the simmering broth
Cover and cook for 15 minutes, until dumplings are cooked through
Remove chicken pieces from the pot, shred the meat, and return it to the pot
Stir to combine
Serve hot and enjoy
